On paper, it doesn’t make a lot of sense, but the Campari spritz is one of the most refreshing drinks out there. It’s ice-cold and bubbly, filled with juicy orange flavor and crisp Prosecco.
I always used to worry the bitterness of Campari would take over the drink and ruin it for anyone who doesn’t just LOVE bitterness (like me).
But instead, it adds just enough backbone to the cocktail that you can’t help but go in for another sip. It’s sweet, fresh, spritzy up front, and it finishes with a lingering bitterness that is just so good.
So even if you’re unsure of Amari liqueurs and unsure of bitterness in general, the Campari spritz is worth a shot. You might be surprised!

- Fill a wine glass with ice.

Add an extra fun flavor to the classic cocktail with some of the ingredients below!
- aperol: use 1 oz Aperol and 1 oz Campari for a slightly sweeter, less bitter version of the classic spritz.
- grapefruit: Use 1 oz fresh grapefruit juice along with 1 oz Campari and top with Prosecco. It will be an extra fresh, citrusy, low-alcohol version.
- elderflower: Use 1 oz elderflower liqueur and 1 oz Campari for an added floral sweetness.
- cucumber: Muddle cucumber slices in the bottom of the glass before adding the remaining ingredients. So refreshing!
- rosé: Use rosé sparkling wine in place of the Prosecco for a beautiful color and extra floral notes.
- blood orange: Top with blood orange soda or freshly squeezed blood orange juice in place of regular soda water. This will be extra beautiful!
