This elegant lemon sgroppino cocktail is one of our favorite celebration drinks. We love to make it for special occasions-- as a greeting to guests on New Year’s Eve, as an aperitif for Valentine’s Day, and for those random weeknights when you desperately need something special.
The sgroppino cocktail is a zesty, lemony, wonderfully refreshing drink that’s easy to make and very adaptable. You can skip the rosemary infusion if you want. You can even skip the vodka entirely for a lighter drink. Use any flavor of sorbet you want, though I love the simplicity and elegance of lemon.
But to start with, I suggest you give the sgroppino recipe below a fair shot. Use high quality vodka for the cleanest flavor, and watch the sweetness level of the Prosecco you use. Brut Prosecco is ideal, and, absurdly, the terms Extra Dry and Dry indicate higher levels of sugar. The lemon sorbet provides plenty of sweetness, so make sure to keep the Prosecco in check.
how to make rosemary infused vodka
The rosemary infused vodka adds a touch of herbal complexity to this lemon sgroppino cocktail. I prefer a delicate, soft touch with the rosemary and only infuse it for 1- 3 days. The longer the rosemary sits in the vodka, the stronger the flavor will be. Taste the vodka every day, and remove the rosemary when the flavor is right for you.
- Cut 3- 5 sprigs of fresh rosemary into 3-inch pieces (to ensure it’s completely submerged when the vodka is added)
- Pour 1 ½ cups of vodka over top
- Let sit for 1- 7 days, tasting daily
- Remove and discard rosemary sprigs
Rosemary flavor will start to diminish after a few weeks, so the infused vodka is best used when fresh. It will also turn a light brownish-pink color after about 12 hours of infusing. The color is totally normal and all part of the infusing process.

- Pour infused vodka into a flute
- Scoop in lemon sorbet
- Top with Prosecco
- Serve!

- 3- 5 rosemary sprigs
- 1 ½ cups vodka

- 1 oz rosemary infused vodka (recipe above)
- ⅓ cup lemon sorbet
- 3 oz Prosecco
- fresh rosemary, for garnish
Instructions

- Cut rosemary into 3-inch long pieces and place them in a mason jar or small glass bottle. Add vodka and seal jar.
- Store in a cool, dark place for at least 24 hours and up to 1 week, tasting daily. Remove and discard rosemary when flavor reaches desired strength.

- Add vodka to champagne flute and scoop in sorbet.
- Pour Prosecco over top. Garnish with rosemary sprig and enjoy immediately.
Notes
Rosemary vodka will keep indefinitely, but the flavor will start to fade after a few weeks. It’s best used fresh.
