Ingredients

fried shallots:

  • 2 shallots, thinly sliced into rings
  • vegetable oil, for frying (about ½ cup)
  • fine salt

saffron risotto:

  • 6 cups low-sodium chicken stock (you may not need all of it)
  • 6 tbsp cold butter, divided
  • 1 small onion, finely diced
  • 1 garlic clove, minced
  • kosher salt
  • freshly ground black pepper
  • 1 1/2 cups risotto rice (arborio, carnaroli, vialone nano)
  • 1 cup dry white wine
  • 1 tsp saffron threads
  • 1 1/4 cups finely grated parmesan, plus more for serving
  • edible flower petals, such as calendula, for garnish (optional)
