I love the briny, tangy flavor of feta cheese. It has a beautiful intensity. Yet it also has a purity to it-- the flavors are direct and clean and recognizable. It doesn’t take much to make a statement in a dish. That same intensity that I love so much, though, can be overpowering. And the saltiness can throw off the balance of an otherwise perfect dish.
This whipped feta dip is my delicious solution. It pairs that intense flavor with a velvety smooth, whipped texture, and it mellows the sharpness a bit, too.
It’s the best of both worlds-- a silky, luscious dip with a deep flavor. And when you combine this whipped feta dip with cool crunchy cucumbers, a ton of fresh herbs and a fluffy wedge of pita bread-- you’ll be hard pressed to want to stop. It makes a light and very satisfying meal (dips like this are my favorite kind of dinner). It’s also an exciting alternative to hummus and an appetizer your party guests will love.

I absolutely love to pair this whipped feta dip with a super bright Pinot Noir rosé, such as those coming out of Germany. The cool climate produces a light, pure, high acid rosé that is a delicious complement to this tangy, creamy feta spread. Vinho Verde, which is light and zesty and simple, would be a great white wine to serve here too. It’s simple and fresh, and it keeps the focus on the sharp flavor of the feta and mirrors the herby cucumber salad.

Ingredients
whipped feta dip
- 7 oz whole-milk feta cheese, broken into chunks
- ¼ cup sour cream
- 2 oz cream cheese
- 1 tbsp heavy cream
- 2 tbsp olive oil, plus more for drizzling
- Herby cucumber salad (all of recipe below)
- Fresh pita bread, cut into wedges
- Assorted crackers

- 1 English cucumber, diced
- 1 tbsp red wine vinegar
- 2 tbsp extra virgin olive oil, plus more to drizzle
- 1 teaspoons ground sumac
- ¼ tsp kosher salt
- freshly ground black pepper
- 2 tbsp chopped dill
- 1 tbsp chopped parsley
Instructions

- Combine feta, sour cream, cream cheese and olive oil in the bowl of a food processor. Blend until velvety smooth and creamy, about 2 minutes. Transfer to a serving dish.
- Use the back of a spoon to create swirls in the dip, then drizzle with extra olive oil. Serve with cucumber salad, pita wedges and crackers.

- Combine cucumber, vinegar, olive oil, sumac, salt and black pepper in a medium bowl. Toss to combine. Stir in herbs. Taste, add more salt or pepper if needed (but remember to go easy on the salt-- the feta dip will add plenty). Serve with whipped feta dip.
Notes
Whipped feta dip will keep, covered refrigerated, for up to 1 week. It will firm up when cold. To soften, let sit at room temperature for about an hour.
Cucumber salad is best consumed right away.
