Black Lentil Salad

You Will Need: – Dried Black Beluga Lentils – Onion – Extra-Virgin Olive Oil – Sherry Vinegar – Maple Syrup – Dijon Mustard – Fresh Thyme – Brussels Sprouts – Almonds – Fresh Goat Cheese

01. Cook black lentils, drain and rinse. Make dressing: sherry vinegar, maple syrup, dijon, thyme, olive oil, salt, pepper.

02. Thinly slice brussel sprouts on a mandoline and add to dressing. Add almonds.

03. Add cooled lentils; toss to combine.

04. Gently toss in goat cheese.
