Carrot Ginger Soup

You Will Need: – Carrots – Ginger – Shallot – Garlic – Honey – White Miso Paste – Cayenne – Sesame Seeds – Chicken Stock – Heavy Cream – Extra-Virgin Olive Oil – Canola Oil

01. Toss peeled and chopped carrots with a honey ginger glaze.

02. Roast until caramelized, about 45 minutes.

03. Make spicy, seedy fried shallot oil.

04. Blend roasted carrots with miso paste, roasted garlic cloves, chicken stock and cream.

05. Add salt or honey to blended soup, to taste. Ladle hot soup into bowls and drizzle with shallot oil.
