Coffee Ice Cream

You Will Need: – Coffee Beans – Whole Milk – Heavy Cream – Light Corn Syrup – Kosher Salt – Cornstarch – Dried Milk Powder – Sugar – Vanilla Extract – Coffee Liqueur (optional)

01. Place coffee beans in a resealable plastic bag and crack them into small pieces with a rolling pin.

02. Combine sugar and milk powder; set aside. Whisk together cornstarch and a splash of milk; set aside. Bring remaining milk, cream, corn syrup, and salt to a boil.

03. Whisk in milk powder/ sugar mixture and boil for 2 minutes. Whisk in cornstarch slurry and simmer until thickened, about 3 minutes. Transfer to a large bowl, mix in coffee beans and vanilla.

04. Chill over an ice bath, cover with plastic wrap, and refrigerate overnight. Strain through a fine sieve; discard crushed coffee beans. Churn in an ice cream maker until a soft-serve consistency.

05. Serve as is, or transfer to an airtight container and freeze.
