Peppermint Meringue Cookies

You Will Need: Egg Whites – Superfine Sugar – Cream of Tartar – Vanilla Extract – Peppermint Extract – Fine Salt

01.  Paint the inside of a piping bag with 3 stripes of red food coloring.

02.  Beat egg whites, cream of tartar, and salt to soft peaks. Slowly add sugar and beat until egg whites are stiff and glossy.

03. Stir in peppermint and vanilla extracts. Pipe onto sheet pans and bake until firm and no longer sticky.

04. Turn off the oven and let meringue cookies dry out for at least another 1 ½ hours.
